(本文无利益关系,纯个人喜好,诚意创作)吃货界的大事发生了,美国时间前天(2017.4.5)凌晨The World’s 50 Best Restaurants 2017在澳大利亚墨尔本Royal Exhibition Building揭晓,本熊猫还在YouTube上瞄了眼直播:(图片截图自YouTube:@Fine Dining Lovers,版权属于原作者)我大加州唯一上榜的餐厅是:旧金山的Saison,名列第37名。而今年拔得头筹的是纽约的Eleven Madison Park,全美国一共有6家餐厅上榜。The World’s 50 Best Restaurants是个什么排名,让米其林遍地的加州只有一家餐厅上榜?!它是由英国餐饮届著名的《Restaurant》杂志发起的一项评选,评委是来自全世界的餐厅主厨和餐厅老板(占比34%),美食评论家(占比33%)和全世界旅行的美食家(33%)。历史上napa的French Laundry得过2003和2004年的第一名,2002和2005年的第三名。这项排名开始于2002年,但是受欢迎程度已经让它成为一个全球现象。有多火呢?当年哥本哈根的餐厅Noma在2010年获得这项排名的冠军的时候,第二天就立刻有超过十万人预定他们家的位置。害得餐馆额外雇佣了3名员工专门来拒绝定位要求,就这样等位名单还是排了一年多。我知道大家已经等不及要看看这位加州今年上榜的Saison餐厅了。它是一家Contemporary American风格的餐厅,去那吃饭并没有dress code,整个氛围是休闲而又奢华的,背景音里响着八九十年代的摇滚。(图片来自:http://www.sfgate.com/,摄影:John Storey,版权属于原作者)Saison每晚的tasting menu多达18道course,主厨名叫Joshua Skenes,他根据当天最好的食材决定给顾客提供什么食物,所以每天的菜谱一大早新鲜出炉的。主厨Joshua Skenes(图片来自:http://www.sfgate.com/,摄影:John Storey,版权属于原作者)我猜吃货们这会已经摩拳擦掌了,先来看点照片预热预热:sea urchin on toast(图片来自:http://www.sfgate.com/,摄影:John Storey,版权属于原作者)这可是Saison的名菜:像上过釉一样闪着光泽的海胆放在浸满了浓浓酱汁的面包上,还裹着一点点蔬菜末末,而面包是放在壁炉里文火慢烤了三天才做出来的。Trout, smoked in wood oven(图片来自:http://www.sfgate.com/,摄影:John Storey,版权属于原作者)Wild Thistle with bouillon(图片来自:http://www.sfgate.com/,摄影:John Storey,版权属于原作者)The Black Walnut Soufflé(图片来自:http://www.sfgate.com/,摄影:John Storey,版权属于原作者)Raw diamond turbot served with plum sauce and lemon(图片来自:http://www.sfgate.com/,摄影:Michael Short,版权属于原作者)White Sturgeon Caviar(图片来自:http://www.sfgate.com/,摄影:John Storey,版权属于原作者)Golden Eye Snapper(图片来自:http://www.sfgate.com/,摄影:John Storey,版权属于原作者)另外,Saison从2014年开始就获得每年的米其林三星,现在米其林指南上对它的推荐是:“No expense has ever been spared in this massive wow-inducing space. There are enough shining copper pots to supply a village of restaurants in France; natural-edged wood tables and a minimalist backdrop conjure Scandinavia. There is also a refreshing breakdown of traditional barriers between the kitchen and dining areas, underscored by the chefs' visits to each table, personally presenting and describing dishes. While there are formal elements to the service, it is also natural and relaxed. An '80s soundtrack lightens the mood. Chef Joshua Skenes uses extraordinary skill and detail to craft each item on his spontaneous menu-especially the seafood courses. Expect fermentation as well as the smoke of a wood-fired hearth to feature prominently throughout these wonderfully modern dishes. Meals may move from a purposeful pairing of briny caviar with a chawan mushi-style custard and smoky cube of hearth-toasted brioche, to a woodsy grilled root vegetable consommé with yuzu zest and butter-poached daikon. Pure flavors are paramount in the silky black cod grilled over embers and served in a tangy pool of cultured yogurt with makrut lime leaves.
